Jim Caraballo, 63, of Lexington, Nebraska, passed away Monday, January 30, 2012, at the Lexington Regional Health Center. He was born August 21, 1948, at Fredricksburg, Virginia to Jose and Florence (Phelps) Caraballo. Jim moved to Hastings, Nebraska as a young boy where he attended school. Jim was united in marriage to Cora Gomez and two children were born to this marriage; Margarita and Jimmy. He then married Donna Layland and two children were born to this marriage; Orville and Tricia. When Jim moved to Lexington to work at the IBP Beef Packing Plant, he met and married Sharon White on Feburary 5, 1999, at Lexington. He welcomed Sharon’s sons into the family; Dave, Bob & Steve. Jim’s working years were all spent at beef packing plants in Nebraska and Kansas. He worked 20 years for Tyson Fresh Meats in Lexington until the time of his death. Jim loved to fish, he spent many hours at the Johnson Lake Inlet catching countless fish and sharing them with family and friends. He enjoyed spending time with his family and doing yardwork. Survivors include his wife: Sharon Caraballo of Lexington, Nebraska Two sons: Orville Caraballo of Thornton, Colorado Jimmy Caraballo of Pueblo, Colorado Two daughters: Tricia Grossaint of Aurora, Colorado Margarita and husband Miguel Acosta of Pueblo, Colorado Three stepsons: Dave Watkins of Dallas, Texas Bob Watkins of Thornton, Colorado Steve Watkins of Kearney, Nebraska Mother-in-law: Ruth White of Lexington, Nebraska Many grandchildren, great-grandchildren, siblings, other relatives, and friends. Jim was preceded in death by his parents and several siblings. The family has honored Jim’s wishes that his body be cremated. There will be no visitation. A Memorial Graveside Service will be held Thursday, February 2, 2012, at 2:00 p.m. at Grandview Cemetery north of Willow Island, Nebraska with Pastor Victor Diaz officiating. Memorials are suggested to the family for later designation. Reynolds-Love Funeral Home in Lexington is in charge of arrangements.
